What are your research interests?
Genetic expression during growth of lactic acid bacteria in various environments. The model system used is growth in beer due to the relatively harsh environment posed by this medium (acidic pH of 3.8-4.2, lack of nutrients due to yeast using abundant sugars for fermentation, low oxygen level, high carbon dioxide level giving pressure, and the antimicrobial effects of ethanol and hop compounds). Rapid detection of microbes in industry, food and human or animal health settings.
What are your current projects?
Analysis of global and specific gene transcription during growth of lactobacilli and pediococci in beer or modeled components of beer (e.g., hops or ethanol added to minimal medium). Assembly of the genome of Lactobacillus backii. Derivation of plasmid variants of various beer-spoilage bacteria and analysis of their ability to grow in beer. Analysis of biofilm deposition on stainless steel for lactic acid bacteria growing in beer.
